Core Positioning
For root and stem crops (potatoes, cassava, yams), berries (grapes, cherry tomatoes), stone fruits (peaches), and soft fruits and vegetables (tomatoes, plantains), a "high-temperature and high-pressure steam+modular chamber" design is used to achieve continuous peeling of 1-20 tons/hour, with a peeling rate of ≥ 98% and a pulp loss rate of ≤ 4%, meeting the raw material processing needs of deep processing scenarios such as french fries, tomato sauce, and dried fruits

Potatoes/Yam/Cassava: treated with 0.5 0.7MPa high-pressure steam for 30 seconds, combined with a 15mm diameter drum screen, to separate broken skin from intact fruit flesh. The starch loss rate after peeling is ≤ 2% (better than mechanical peeling by 5%).

Grapes/Saint Mary's fruit: transported by tunnel airflow with steam pressure of 0.3MPa for 8-12 seconds, and blown away from the skin by 30m/s airflow at the outlet to avoid crushing and damage (integrity rate ≥ 95%).

Tomatoes/plantains: Designed with a vacuum chamber, the pressure is released to -0.05MPa within 0.5 seconds after steam treatment. The skin bursts due to the pressure difference between the inside and outside, resulting in a peeling rate of 98% and no browning of the flesh.

Peach: Steam pressure 0.4-0.5MPa, processing time 15-20 seconds. Peach skin is prone to adhesion. Immediately spray cold water after steam, with a temperature difference of 50 ℃

Working Principle

 The steam peeler uses high-temperature and high-pressure steam (1.2-1.5MPa, 133-170℃) to penetrate the material's epidermis within 7-10 seconds. By taking advantage of the principle of thermal expansion and contraction, it causes the epidermal cells to rupture and the pectin layer to decompose, forming an easily peelable interface. Subsequently, it achieves non-destructive separation of the epidermis from the flesh through roller friction or cold water spraying (with a damage rate of ≤2%). It is equipped with a steam recovery system (with a thermal efficiency of over 85%), PLC intelligent control, and a water circulation system. The water consumption is only 1/5 of the traditional method, and it is suitable for multiple types of materials such as potatoes and garlic.
